Roast Veg with Giant Meatballs


Made 3 inch meatballs with half beef, R's recipe of half ground pork sausage with hungarian paprika, lemon zest, and a whole fresh poblano added right into the grinder. browned then oven baked.
Served with a casserole dish full of veggies: potato, carrots, onion, brussel sprouts, over-roasted acorn squash and garlic, and half a green onion. Half-filled with yesterdays chicken stock, topped with parsley, rosemary, allspice, herb de provence, oregano, salt and pepper. Baked for 2 hours.
