Sauce: Half cup cabbage, 3 small onions, half a poblano
Seasoning: 1 mexican red dried chilli, 1 tsp cumin seeds, garlic powder, marjoram/oregano, italian seasoning.
Soak beans overnight. Drain water and rinse. Boil beans for 2-4 hours in plenty of water with a few bay leaves. set aside
Make 8 small tortillas with Masa and water, pinch of salt. set aside
In hot cast iron pan on max heat, throw in chilli torn into small pieces, then throw in cumin. Make sure the fan is on and the door is closed and windows open.
When chillies turn dark and you can smell them, turn the heat down a bit and put in some cold water to cool the pan down and put the lid on.
Then add finely chopped cabbage and some more water and keep lid on to steam cabbage.
Add sliced onions, making sure there is enough water to steam onions and keep lid on.
When onions are softer, turn heat down to medium or a bit below medium; Throw in roughly slivered poblano and a light sprinkle of olive oil. Fry until onions and cabbage are golden, tossing occasionally
Add 3/4 can crushed tomatoes; Stir in 1 tsp garlic powder, 1 tsp italian seasoning, 1 tsp oregano. Turn heat to minimum.
Take a few spoonfuls of beans, lightly drained into a pan on medium-high heat. Use a good amount, about 2 cups.
Add a sprinkle of salt and pepper, and 1 tsp of garlic powder and 1 tsp italian seasonings. Mash beans with metal spoon until no liquid remains and you have roughly 2 cups or more of bean filling; add more beans if you need. Set aside.
In a rectangular casserole dish, spread 2 spoonfuls of tomato sauce on the bottom, then lay two tortillas down flat to cover the bottom. Spoon 2 large spoonfuls of bean filling into each tortilla. Place two more tortillas on top of the bean filling, like making 2 bean sandwiches.
Spread half of the tomato sauce on the tortillas. Cover with two more tortillas. Spread the remaining bean filling on tortillas. Place shredded pork evenly on the bean mixture. Cover with half the remaining tomato sauce.
Cover with 2 more totillas and spred the rest of the tomato sauce on top.
Bake at 350 for 30-40 mins.
