Korean potato and scallion pancake served with shredded duck, duckfat, butter, and soy sauce.
Pancake: 3/4 c rice flour, 3/4 c water, 1 egg, 1/2 tsp salt, green onion, cooked potato slices.
Duck:Twice cooked, for 3 hours each, splitting apart after first 3 hours. Meat is like carnitas pork.
