Made the brown butter recipe for oatmeal cookies. it turned out very nice though I did make some adjustments. we have been using brown butter all month, and are now almost out of butter.
I browned the last 4 tbsp of butter, and used 2-3 tbsp coconut oil. I filled the rest with whipping cream, a very expensive organic one from sweet potato. we paid $7 a liter, that's half price.
I blended the 2 cups of sprouted oats. i blended the pumpkin. not sure if it was a full cup, as i kept squeezing juice out of it. it was half a half liter of pumpkin.
I added lots of spices and at least a tsp of each: cardamom, nutmeg, cinnamon, allspice, clove, mace, ginger powder.
I used 3/4 cup almond flour instead of 1 and 2/3 cup flour.
I chopped up a bar of slinky: swiss milk chocolate. its pretty dark.
I used a teaspoon of sugar.
the result is a very nice oatmeal cookie that pleasantly tastes like pumpkin. I'm glad because this is the first pumpkin recipe I really enjoyed using the Fairytale pumpkin.
