Made Tiramisu yesterday. used a different recipe which was pretty good. it mixed the mascarpone into the whipped cream, instead of two layers. i think i liked it in 2 separate layers. but its still very good. i also saved soem whipped cream for other uses as it seemed like too much. it filled two containers. and i still had a pack of lady fingers left, and we ate one already. so it used 2 packs (the bag comes with 4). Also i used 2 tbsp of sugar in the whoel thing, it called for a 1/4 cup. but there is sugar int eh fingers and the brandy. i added lemon zest to the cream mixture.
making mascarpone cream is pretty easy. might do it for other desserts.

Keto Mascarpone recipes: Squash cake with mascarpone icing/layers. Lemon zest is the trick to mascarpone.
idea: mix chocosol jaguar with mascarpone custard.
make keto lady fingers and soak them in coffee. spread mascarpone cream on top. makes a fast tiramisu without whipping cream.
blueberry lemon pancakes topped with mascarpone.
squash cake with delicata. or with kabocha.
almond/cashew butter mousse. layer with a chocolate mousse. and blueberry mousse.

So i need blueberries, blended, then add to whipped mascaprone, with custard eggs added. then serve.

Next week going to Larrys Mart. going to get valrhona chocolate. I would have got a chocosol drink but i didnt want to have a lot of sugar. they didnt have the cookies and snacks that they do on st clair. i would get the truffle cream for 30, and the snowdonia truffle cheese for 16. and the king crab legs for 96/lb. looking forward to it already.

Went to Larry Mart. got all kinds of Valrhona chocolate from Dominios bulk foods. a couple ducley light chocolate, manjari (madagascar) dark, half a pound of raspberry, a couple strawberry, and milk caramel, and another dark varietal Valrhona, may have started with "G". The two darks taste different from each other. the milk chocolate was very good and is gone now. strawberry is very good, not sure if its as good as raspberry. I got the dulcey ones to use in baking and desserts, its an easy way to add a touch of sweetness to an unsweetend dish like barfi. the store also had choclate covered pecans, malt balls, and raisin, which we got. the pecans were very good. although all the choclate tasted wierd after eating the valrhona. they tasted like coconut. went to busters again. was not very happy with the chicken shrimp gumbo. i guess it wa good gumbo, but i didnt know that i didnt really like gumbo. i wanted lobster bisque. i will never settle for less. they had a sign for snow crab roll, 19.99, 2 bucks less than lobster roll. got the crab salad, turns out it was fake crab. we were shocked. the salad was not very fresh, cucumber slices were a bit dehydrated. we ate half the veggies, the good half.

I wanted to make a blueberry lemon cuatsrd. then i thought maybe chocolate custard with xmas cake bits. well we have key limes so i'm making keylime custd with coconut flakes in it. made barfi yesterday with some coconut flakes, they are so sweet and i think i should use a lot mroe of them in my barfi. its so easy making sugarless desserts with coconut. and i used about 4 tbsp of cocnut oil. same amount coconut cream. boxed is the best for barfi. i didnt add enough liquid and its a bit crumbly. its very good tatses like cookie dough! sugarless cookies.
i realized that the bit and bites or power balls they are selling in summerhill is the same as the ones in harrods in london, and barfi is just like one of those things. i saw a scottsh version with condensed milk and butter. it looked yummy and should be able to convert to a keto recipe, using simple dry milk powder. theese powerballsa re the new trend. superfood snacks. well i use coconut oil which is a superfood and milk powder is protein.

A lot more mascarpone in our future. More organic foods.
