Purple Carrot Squash Chocolate Cake with Nuts
Dessert: Purple Carrot Squash Chocolate Cake with Nuts

Dinner: French-Mexican taco

cumin seed
beef
2 small tomatoes
oregano
garlic
habanero powder
splash of wine

Veg Chocolate cake:original recipe here. Made about half the recipe which half filled my baking dish. Cake turned out light and fluffy, but moist inside. Tastes very good warm and strong chocolate scent and taste. Can't even tell it's made of veggies. We baked this one for 45 minutes.

Ingredients:
1 large purple carrot
1/2 c - 3/4 c thoroughly pureed and drained stripetti squash
1/2 c coconut flakes
1 c almonds
1/4 c dark chocolate powder
2 extra large eggs
2 tbsp coconut oil
2 tbsp rice flour
1 tsp baking soda
1/2 tsp salt

Method:
Blend carrot, coconut flakes and almonds individually.
Put them all into a blender/processor and blend.
Add other ingredients and blend.
Bake at 350 F for 30 min - 45 min.
Can eat while warm - very delicious.
