Substitutions:
Wheat flour with non-wheat flour: 1/3 c coconut flour for the 1 cup wheat flour, and 1/3 c rice flour
Pumpkin Puree with Musquee de Provence freshly baked and drained, not blended
Conversions:
Coconut flour can be used as wheat flour in ratio 1:3.
Rice flour can be used instead of wheat flour 1:1.
Exclusions: Sugar

Muffins were light and fluffy with texture, and moist and came out of the ramekins cleanly.
