Sugar

Here's a sucrose molecule. How does the body tell if it came from table sugar or organic artisanal Agave nectar?
It can't of course.
Now look at it. That one molecule of glucose is energy.
The fructose molecule Lustig points out is technically a toxin.
Fruit in season is perfectly acceptable, but all sucrose and fructose are extraneous and harmful

Lustig:Fructose is toxic no matter what the source.

To explain further, sucrose is disaccharide composed of one molecule each of glucose and fructose. They are held together by a hydrogen bond so weak your spit dissolves it and at this point you have ingested a molecule of fructose and a molecule of glucose.

The glucose is used as energy in HTP synthesis. Modulo the special case of the elite athlete, the fructose goes to the liver and turns to fat.

Fruit in moderation is okay, the fiber slows down tthe absorption of glucose and for this reason fruit juice is not okay.

Put the point remains, molecules of fructose int he body do the same harm whether they came from organic artisanal agave nectar or table sugar. Its all the same molecule.
